Obsession

So I have a bit of an obsessive personality. I imagine that former employers have loved this quality about me. My newest obsession is filling my freezer with make ahead meals and snacks. Last week I made 60 some meatballs. Today on a wim I decided to make pancakes and waffles to freeze. This was actually sparked by a bad experience with Eggo's Mini Pancakes. Keira loves these things - they are the healthiest things in the world, but what do you do. Anyway, the last box I bought, about 1/2 of them were smooshed and wouldn't cook right. I e-mailed and complained and never received a response. So, I'll show them I say to myself and I'll make my own. I made Whole Wheat Pancakes and Waffles that are much healthier than the Eggos and much cheaper. Yippee for me. So now I am sitting here trying to figure out what else I can make and freeze. I came across this great new website about Once a Month Cooking. Something I have always wanted to try. This site makes it super easy in terms of grocery lists and instructions. I think I am really going to try it this time. And most of the meals they have in the Feb plan, we all would eat. I probably won't do the lasagna as I have a couple in the freezer already and I am picky about lasagna. I'll probably wait for a few weeks as we just had a meal swap. Awesome! I checked it out and I think I may give it a try when I get back. There was a comment on there that it would help if they broke up the shopping list, I agree with that, I just need dinners. But YAY!
